A beautifully expressive washed Wush Wush from Marlon Rojas and Tres Cielos, high in the hills of Pitalito, Huila, Colombia.

Marlon is a third-generation coffee producer whose journey eventually brought him back to his family’s roots in coffee. His approach combines the knowledge passed through generations with a much more technical approach to fermentation and processing, with a focus on producing coffees that are distinctive, clean and expressive.

The Coffee

This lot is Wush Wush, an incredibly aromatic variety that can produce complex and elegant cups when grown and processed well.

At Tres Cielos, the coffee grows at 1,720 metres above sea level, under the shade of native trees in Monserrate Village, Pitalito, Huila.

Although this is classified as a washed coffee, the processing goes considerably further than a straightforward washed process.

After harvest, the cherries undergo a 24–36 hour controlled fermentation, with both temperature and pH carefully monitored. Once the desired fermentation point is reached, the coffee is depulped before undergoing a second 48-hour fermentation submerged in water under aerobic conditions.

The coffee is then thoroughly washed and dried. This double-fermentation approach is designed to develop aromatic complexity and sweetness while retaining the clarity and structure associated with washed coffees.

In the Cup

Expect a coffee that is sweet, bright and aromatic, with fresh red-fruit character upfront followed by grapefruit-like citrus acidity and brown-sugar sweetness.

The body is medium-light and juicy, with floral aromatics adding another layer to the cup. The finish remains clean, sweet and aromatic.

We think this is a particularly exciting example of Wush Wush: expressive enough to showcase what makes the variety special, while the washed processing keeps everything clean and defined.
